Smoked Chipotle Chicken Breast

A recipe for smoked chipotle marinated chicken breasts.

Serves 6

Ingredients

3 chicken breasts , boneless skinless

1 teaspoon kosher salt

1/2 teaspoon coarse ground black pepper

2 teaspoons chipotle chili powder

1 teaspoon dried oregano

1 teaspoon cumin

1/4 cup distilled vinegar

4 cloves garlic , minced

6 tablespoons vegetable oil

1/4 cup water

Directions

Pound chicken to an even thickness, about a half inch thick.

Add all the ingredients together and marinate for at least 6 hours.

Prep grill for direct/indirect cooking, Add wood for smoking and bring grill to 275°F.

Remove chicken from marinade and add to indirect zone. Cook to 150°F internal.

Remove chicken from grill and cover.

Increase direct zone to high heat.

Add chicken to hot zone and grill for 1 minute per side or until reaching 160°F internal.

Remove from grill cover. Leave to rest for ten minutes before serving.
